Some inspiration for side dishes

In my diet, I have replaced potatoes, rice and pasta with vegetables and salads in different varieties. I have found that it gives a more stable blood sugar, reduces sugar cravings and a greater feeling of satiety. I use root vegetables as a side dish instead of potatoes, shredded squash, sweet potato and carrot instead of rice and pasta. And different salads. Here is a couple of suggestions:

A mix of root vegetables:

  • Parsley
  • Parsnips
  • Celery
  • Carrots
  • Beets
  • Sweet potatoes

Don't always use all types together, mix a little differently.
Use only organic vegetables as much as possible
Cut them into cubes, place in an ovenproof dish, add a small dollop of coconut oil, season with salt, pepper and preferably a little fresh chopped rosemary, vary the flavor with different spices.
Bake in the oven for about 30 minutes at 185 degrees, can also be placed in foil and baked on the grill.
You can very advantageously put the pieces of meat that you are going to have on top of the vegetables for part of the cooking time, it gives more flavor to the meat and the vegetables

Tip:
Drizzle over some good liquid honey before putting it in the oven, it enhances the flavors.
Place small broccoli florets on top for the last 10 minutes.

Mashed root vegetables

Mashed root vegetables are a perfect accompaniment to lamb, beef, chicken and fish. Vary them with the types of root vegetables you have available. Try to experiment with different spices and aromatics to flavor the mash.

Vegetable spaghetti

Vegetable spaghetti as a substitute for spaghetti and rice. I use shredded squash, sweet potato and carrots which I mix together and heat in a little coconut oil on a medium hot frying pan, feel free to mix in small broccoli florets, goes well with many dishes.

Tip:

As an accompaniment to meat sauce, I mix in some freshly grated Parmesan cheese.

For fish, add a little lemon or lime and sprinkle over some sesame seeds.

Also try with fresh, roughly chopped green asparagus.
